Melt Aways

This post is for a friends sister. She looks at our Blog often (Never leaving a comment) but has asked her sister many times why I haven't posted the melt away recipe. Well here it is Julie. By the way in our family we really call the Melt Away... Julie Cookies because my cousin Julie gave us the recipe and makes them every year.
Melt Aways
2 cups all-purpose flour
1 cup margarine or butter (softened)
1/3 cup heavy cream
Mix the ingredients into a dough and chill for an hour. Roll out half at a time to 1/8" thick and cut into 1 1/2" rounds. Carefully dip both sides of cookie in sugar and place on ungreased baking sheets lined with parchment paper. Poke with a fork 4 times and bake 7-9 min. at 375 F. When cool fill with filling and sandwich together.

Creamy filling:
3 cups powdered sugar
4 teaspoons vanilla
1 cup margarine or butter
food color if desired

Mix all filling ingredients until smooth and fluffy. I've found this amount of frosting will do a double batch of wafers.
These cookies take time to make but are worth it. They really do melt in your mouth!!

Good grief! Don't you know that I am trying to misplace those holiday pounds that I found. I'm drooling and will probably have to give it a try. Wouldn't these make nifty little valentine cookies? Maybe that will be my excuse.

Laurie we call these 'melting moments' in Australia.. useless bit of information for you.. LOL!
Now I am sooooo hungry... I love how you have coloured the cream centres, never seen anyone do that, they look even more yummy with coloured Cream filling.. {she says as her tummy rumbles}
